This easy little snack is sugar-free (if you use unsweetened coconut) and gluten-free. It is fun for kids to make and requires no baking. For a tasty but less healthy variation, add chocolate chips. Chill if desired. Enjoy!

Coconutty Balls

Ingredients

  • ½ cup almond flour
  • ¼ cup cashew butter
  • ¼ cup mashed banana
  • 5 tablespoons shredded unsweetened coconut, divided

Cooking Directions

  1. Mix almond flour, cashew butter, banana, and 3 tablespoons coconut together in a bowl; roll into bite-size balls.
  2. Spread remaining 2 tablespoons coconut in a shallow bowl. Roll balls in coconut to coat.
Substitute peanut butter or almond butter for cashew butter if desired; Roll the balls in crushed nuts instead of coconut if desired.
