Ingredients

  • 1 (4 ounce) can pineapple chunks in juice
  • 1 banana, peeled
  • 1 (10 ounce) can coconut milk
  • ½ teaspoon vanilla extract

Cooking Directions

  1. Place the pineapple chunks with juice, banana, coconut milk, and vanilla extract into a blender; puree until smooth. Pour into 6 ice pop molds and freeze until solid, about 4 to 5 hours.
If you have any of the pineapple, banana, etc. mixture left, pour it into an ice cube tray, cover tray with plastic wrap, and insert toothpicks into the center of each "cube."; 10 1/2 ounces of bottled Pina Colada mix may be used in place of coconut milk.
